做法:春笋切成片后加少许(xǔ )盐捞出后用(yòng )清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清水半掩住春笋(sǔn ),盖上锅(guō )盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
