做(zuò )法:春笋切(qiē )成片后加(jiā )少许盐捞(lāo )出后(hòu )用(yòng )清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放(fàng )入(rù )生(shēng )姜(jiāng )、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
