做(zuò )法:春笋切(qiē )成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐(yán ),翻炒均(jun1 )匀稍(shāo )收汁时盖(gài )上锅盖焖。
