做法:春笋(sǔn )切成片后加少许盐(yán )捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加(jiā )入(rù )盐(yán ),翻炒均匀稍(shāo )收(shōu )汁(zhī )时盖上锅盖焖。
