做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两(liǎng )勺油,待(dài )油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清(qīng )水,放(fàng )入煎煮好(hǎo )的鲫(jì )鱼和其他材(cái )料(liào ),武(wǔ )火(huǒ )煮沸,转中(zhōng )小火煲一个半小时,下盐调味(wèi )即可品(pǐn )尝。
