做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软(ruǎn ),拍裂一小块姜,热(rè )锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入(rù )煎(jiān )煮(zhǔ )好的鲫鱼(yú )和其(qí )他材料,武火煮(zhǔ )沸,转中小火煲一个半小时,下盐调味即可品尝(cháng )。
