做法:春笋(sǔn )切成片(piàn )后(hòu )加少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转(zhuǎn )中(zhōng )火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
