做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块(kuài )姜,热锅(guō ),用(yòng )姜块在锅(guō )上擦(cā )一遍,放两勺油,待油六成热(rè )下鱼(yú ),煎至(zhì )微黄。煮沸瓦煲(bāo )里的清水,放入(rù )煎(jiān )煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲(bāo )一个半(bàn )小时,下盐调味即可品(pǐn )尝。
