做法:春笋切成片后加(jiā )少许盐捞出(chū )后(hòu )用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅盖大火(huǒ )煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收(shōu )汁时盖上锅盖(gài )焖。
