做法:春(chūn )笋切成片后(hòu )加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
