做法:春笋(sǔn )切成片后加少许(xǔ )盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快(kuài )熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
