做法:洗净宰好(hǎo )鲫鱼,洗(xǐ )净淮山和薏(yì )米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂(liè )一小块姜,热锅,用姜块在锅(guō )上擦一遍,放(fàng )两勺油,待油六成热下鱼,煎(jiān )至(zhì )微黄。煮沸瓦煲里的(de )清水,放入煎煮好(hǎo )的鲫鱼和其他材料,武火(huǒ )煮沸,转中小火(huǒ )煲一个半小时(shí ),下盐(yán )调(diào )味即可品尝。
