做(zuò )法:春笋切成(chéng )片后(hòu )加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加(jiā )入少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬干的(de )时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖(mèn )。
