做(zuò )法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入(rù )2勺(sháo )油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入(rù )少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入(rù )盐(yán ),翻炒均匀稍收汁(zhī )时(shí )盖上(shàng )锅盖焖。
