做(zuò )法(fǎ ):春(chūn )笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干(gàn )的时(shí )候(hòu )加入盐,翻(fān )炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
