做法:春笋切成片(piàn )后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
