做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱(cōng )切(qiē )成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
