做法:洗净宰好鲫(jì )鱼,洗净淮(huái )山和薏米。用清(qīng )水把陈皮泡软(ruǎn ),拍裂一小块(kuài )姜,热锅,用姜块在锅(guō )上擦(cā )一遍(biàn ),放(fàng )两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲(bāo )里的清水(shuǐ ),放入煎煮好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中(zhōng )小火煲一个半小时,下盐(yán )调味即可品尝。
