做法(fǎ ):春笋切成片后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段(duàn )。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
