做法:洗净宰好鲫(jì )鱼,洗(xǐ )净(jìng )淮山和薏米。用清水把陈皮(pí )泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两(liǎng )勺(sháo )油,待油六成热(rè )下鱼(yú ),煎至微(wēi )黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中小火煲一个半(bàn )小时,下盐(yán )调味即可品尝(cháng )。
