做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸(jìn )泡(pào ),生(shēng )姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜(jiāng )、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
