做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用(yòng )清水把(bǎ )陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块在锅上(shàng )擦(cā )一遍,放(fàng )两勺油(yóu ),待(dài )油六(liù )成热下鱼,煎(jiān )至(zhì )微黄(huáng )。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即(jí )可品尝(cháng )。
