做(zuò )法:春笋切(qiē )成片(piàn )后(hòu )加少许(xǔ )盐捞出(chū )后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
