做法:洗净宰好(hǎo )鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软(ruǎn ),拍(pāi )裂一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦(cā )一遍,放两勺(sháo )油,待油(yóu )六(liù )成热下鱼(yú ),煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和(hé )其他材料(liào ),武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可品尝。
