做法(fǎ ):春(chūn )笋切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半(bàn )掩住春笋,盖上锅(guō )盖大(dà )火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁(zhī )时盖(gài )上(shàng )锅盖焖。
