做法:洗净宰好鲫鱼,洗净淮山和(hé )薏(yì )米。用清(qīng )水把陈皮泡软,拍裂一小块姜,热(rè )锅(guō ),用姜(jiāng )块(kuài )在锅上擦一遍,放两勺(sháo )油,待(dài )油六成(chéng )热(rè )下(xià )鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐调味即可(kě )品尝。
