做(zuò )法:春(chūn )笋(sǔn )切成(chéng )片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
