做法:春笋切成(chéng )片后加(jiā )少许盐捞出后(hòu )用(yòng )清水浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅(guō )盖焖(mèn )。
