做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬(áo )干(gàn )的(de )时(shí )候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
