做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖(gài )上锅(guō )盖(gài )大火煮开后(hòu )转中火。煮到水快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
