做法:春笋切成片后(hòu )加(jiā )少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到水(shuǐ )快熬干的时(shí )候加入(rù )盐,翻炒均匀(yún )稍收汁时(shí )盖上(shàng )锅盖焖(mèn )。
