做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧(shāo )热(rè ),倒入2勺(sháo )油,放入(rù )生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
