做法:洗净(jìng )宰(zǎi )好鲫鱼,洗净淮山和薏米。用清水把陈皮泡(pào )软,拍裂一(yī )小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热下(xià )鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转(zhuǎn )中小火煲(bāo )一个(gè )半小(xiǎo )时,下(xià )盐调味即可(kě )品尝。
