做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋(sǔn ),盖上(shàng )锅盖(gài )大(dà )火煮开后转(zhuǎn )中火(huǒ )。煮到水快(kuài )熬干的时候加入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
