做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入(rù )生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半(bàn )掩(yǎn )住(zhù )春笋,盖上锅(guō )盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快(kuài )熬(áo )干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁(zhī )时盖上锅(guō )盖焖。
