做法:春笋(sǔn )切成片后加少许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入(rù )盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖(mèn )。
