做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝(háo )油(yóu )翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上(shàng )锅盖(gài )大火(huǒ )煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
