做法:春(chūn )笋切(qiē )成片后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋(sǔn ),盖上锅(guō )盖大火(huǒ )煮开后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖焖。
