做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用(yòng )清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻(fān )炒(chǎo )1分钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
