做法:洗(xǐ )净宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮(pí )泡软(ruǎn ),拍裂一小块姜,热(rè )锅,用姜(jiāng )块在锅上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎(jiān )至(zhì )微黄。煮(zhǔ )沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其(qí )他材料,武火煮沸,转中小火煲(bāo )一个半小时,下盐调味(wèi )即可品尝。
