做法:春笋切(qiē )成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入(rù )少量(liàng )清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀(yún )稍收汁时盖(gài )上锅盖(gài )焖。
