做(zuò )法:春(chūn )笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛(niú )肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
