做(zuò )法:洗净(jìng )宰(zǎi )好鲫(jì )鱼(yú ),洗净淮(huái )山和薏米。用清(qīng )水把陈皮泡软,拍裂一小块(kuài )姜,热锅,用(yòng )姜块在(zài )锅(guō )上擦(cā )一(yī )遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即可品尝。
