做法:春(chūn )笋切(qiē )成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后(hòu )转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
