做法(fǎ ):春笋切成片后加(jiā )少许盐捞出后用清水浸泡(pào ),生(shēng )姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再(zài )加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
