做法:春笋切成片后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
