做(zuò )法:春笋切成片后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入(rù )盐(yán ),翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
