做(zuò )法:春笋(sǔn )切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮(zhǔ )开(kāi )后转中(zhōng )火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖(mèn )。
