做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅(guō ),用姜块在锅(guō )上擦一遍,放两勺油,待油六成(chéng )热(rè )下鱼,煎至微黄。煮(zhǔ )沸瓦(wǎ )煲里的清水(shuǐ ),放入煎(jiān )煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火(huǒ )煲一个(gè )半(bàn )小时,下(xià )盐调味即可品尝。
