做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加(jiā )入盐,翻炒均匀(yún )稍(shāo )收(shōu )汁时盖上锅盖焖。
